4 large green peppers
5 cups boiling salted water
1 lb. ground beef
2 T chopped onion
1 t salt
1/8 t garlic salt
1/2 cup grated cheese (like Cheddar)
1 cup cooked rice (or millet)
1 can (15 oz) tomato sauce (or diced tomatoes); divided
Heat oven to 350F.
Cut a circle around stems of peppers and remove stems, seeds, and membranes leaving shell of pepper completely intact. Cook peppers uncovered in the boiling salted water for 5 min.s; drain.
Cook and stir ground beef and onion in medium skillet until onion is tender. Drain off fat. Stir in salt, garlic salt, cheese, and rice and 1 cup of the tomato sauce; heat through.
Stuff each pepper withe meat mixture. Stand peppers upright in ungreased 8x8x2 in. baking dish. Pour remaining tomato sauce over peppers.
Cover; bake for approx. 45 min.s. Uncover; bake 15 min.s longer.
