Oh so good!

Veggie Bake

Spray 9x13 pan with non-stick cooking spray. Layer and salt the following veggies:
3 young summer squash (or zucchini), sliced
1 small onion, diced
8 oz. fresh mushrooms, sliced
1 green pepper, diced
1 large tomato, diced
Top with:
3 T. olive oil
3 T. red wine vinegar
pepper, to taste
1/2 cup shredded cheddar cheese
Bake at 375F for 30 min., uncovered, or until tender crisp.
*this recipe is so versatile, most any kind of veggie would go well in it. Next time, we're planning on cutting back the squash to 1-1/2 and supplementing with broccoli. We've also tried it with cabbage. YUMMY!
