Somersizing (Week 1)

Tues~ Lettuce wraps (tuna for RD & I; lunch meat for the kiddos)
Weds~ (bunless) hot dogs & frozen veggies
Thurs~ baked chicken & summer veggie bake
Fri~ (wheat) spaghetti w/ mushrooms
Sat~ calico beans & frozen veggies & salad
Sun~ chili w/ beans

Snacks~ deviled eggs, fruit (apples, strawberries, peaches, nectarines), smoothies, veggies & dip, chips & salsa

The real test will be this coming Saturday when we celebrate my son's 1st birthday! (Where on earth did the time go?!!!) Pizza, pop, chips, cake, ice cream... *sigh*

Good for you guys! We've been trying to eat healthier too. Sometimes it's hard, but we're trying!

As for a vegetarian cookbook, I really like The Vegetarian Mother's Cookbook ( I found it at a used book store. We've liked almost everything we have tried out of it. Lots of bean recipes (also some tofu ones, but you can ignore them if you don't care for tofu...we have found we really like it!). I try to pick a couple new recipes to try out of it every time I meal plan. We're trying one called Tamale Pie this week.

Another reason I like it is because it gives some great insight into nutrtion for pregnant and nursing mothers...might come in handy for a lady like yourself! :-)

Good luck!! Change is hard, just do the best that you can, give yourself a break once in awhile (E only turns 1 once!), and try to stay the course! :-)
