Ready in 35 minutes!
Serves: 56 (you can easily cut this recipe in half)
Serve with: tortilla chips, pita chips, or french bread
1/4 cup butter
3-6 cloves minced garlic
1 (10oz) package frozen chopped spinach, partially thawed
18 oz. artichoke hearts, drained and chopped
2 (8oz) packages cream cheese, softened
2 (16oz) containers sour cream
1 cup grated Parmesan cheese
Melt butter in large saucepan over medium heat. Lightly saute minced garlic. Stir in spinach and artichoke hearts. Cook until tender, about 5 minutes. Mix cream cheese and sour cream into the spinach mixture. Stir in Parmesan cheese. Cook, stirring occasionally, until thickened, 10-15 minutes. Serve warm.
*For parties, after cooking this in a saucepan, we transfer it to a crockpot set on low. Stir occasionally.
