Sweet & Sour Chicken and Quinoa Side Dish

Oh yum! We had this for dinner tonight with a side salad. Let's just say, not many leftovers made it to the fridge. The flavors were an incredible complement to one another!

Sweet & Sour Chicken
Serves: 6
1/4 C cider vinegar
3 Tbls ground mustard
3 garlic cloves, minced
1 lime, juiced
1/2 lemon, juiced
1/2 C brown sugar
1-1/2 tsp salt
ground black pepper to taste
6 Tbls olive oil
6 skinless, boneless chicken breast halves
In a large glass bowl, mix the cider vinegar, mustard, garlic, lime & lemon juices, brown sugar, salt, and pepper. Whisk in the olive oil. Place chicken in the mixture. Cover and marinate at least 8 hours, preferably overnight. Grill (or pan fry in marinade juices). Cook until juices run clear.

Quinoa Side Dish
Serves: 4
1 Tbl butter
1 C uncooked quinoa
2 cups vegetable broth
2 tsp garlic, minced
2 Tbls chopped fresh parsley (or 2 tsp dried)
1/2 Tbl chopped fresh thyme (or 1/2 tsp dried)
1/4 tsp salt
1 small onion, finely chopped
1 dash fresh lemon juice
Melt butter in saucepan over medium heat. Add the quinoa, and toast, stirring occasionally, until lightly browned, about 5 minutes. Stir in broth, and bring to a boil. Reduce to a simmer, cover, and cook for 15 minutes, or until quinoa is tender. In a bowl, toss quinoa with garlic, parsley, thyme, salt, and onion. Sprinkle with lemon juice and serve.

Mel, what is quinoa? and where do you buy it?

Quinoa (pronounced "keen-wah")is a small grain. Looks like millet but cooks up and reminds me of couscous, although it takes a bit longer to cook as it's a grain and not a pasta. Here's some info on it:

I know you can get it at Squirrel Creek. Any health food store should have it. I'd be shocked if Meijer didn't carry it, although you may need to scope out the organic/health food section if you can't find it in the grain section.
